  2. 4 cups chunked cooked chicken

  3. 2 tart red apples -- cored and diced

  4. 2 firm red pears -- cored and diced

  5. 1/2 cup chopped red cabbage

  6. 1 cup low-fat yogurt

  7. 1 cup reduced-fat mayonnaise

  8. 2 tbsp. grainy mustard

  9. Salt and pepper to taste

  10. 1 head Boston lettuce

  11. 1/2 cup chopped Brazil nuts

  12. Paprika

  1. In a large bowl, combine the chicken, apples, pears and red cabbage. Inanother bowl, mix the yogurt, mayonnaise and mustard, pour over the chickenmixture, and toss. Season with salt and pepper. Cover and chill for atleast 1 hour.

  2. Separate the lettuce into 6 leafy cups and divide the chicken mixtureamong the lettuce cups. Top with a sprinkling of chopped nuts and a dash ofpaprika. Serve cold.
