  1. 4 Corn on the cob

  2. 1/4 cup 59ml Water

  3. 4 Zucchini squash

  4. 1/2 cup 118ml Red bell pepper

  5. 1/3 cup 20g / 0.7oz Green onion

  6. 2 tablespoons 30ml Green chiles

  7. 1/4 cup 59ml Lime juice

  8. 2 tablespoons 30ml Vegetable oil

  9. 1/2 teaspoon 2 1/2ml Salt

  1. Recipe Instructions Combine corn and water in a medium saucepan. Bring to a boil. Cover and reduce heat and simmer 7 to 8 minutes or just until corn is tender. Drain and set aside. Cut zucchini into 1/4 inch slices; cut each slice into fourths. Add zucchini and remaining ingredients to reserved corn. Toss gently to combine. Cover and chill several hours
