  1. 12 baby corn , cut into 4 lengthwise

  2. 1 1/4 cups paneer,

  3. cut into 25 mm (1")strips

  4. 3 sliced spring onions whites

  5. 1/2 green capsicum , sliced

  6. 1/2 yellow capsicum , sliced

  7. 1/2 red capsicum , sliced

  8. 1/4 tsp turmeric powder (haldi)

  9. 1/2 tsp chilli powder

  10. 1/2 tsp coriander-cumin seeds (dhania-jeera) powder

  11. 1 tomato , sliced

  12. 2 tbsp tomato ketchup

  13. 2 tbsp tomato puree

  14. 3 chopped spring onion greens

  15. 2 tbsp vinegar

  16. 1/2 tsp garam masala

  17. 1/4 tsp sugar

  18. 2 tbsp chopped coriander (dhania)

  19. 1 tbsp oil

  20. salt to taste

  1. Heat the oil in a pan and add the spring onion whites and all the capsicum and sauté for 2 minutes.

  2. Add the baby corn, turmeric powder, chilli powder, coriander- cumin seed powder, tomato, tomato ketchup, tomato purée and salt and sauté

  3. On a slow flame for 4 to 5 minutes till the baby corn is cooked.

  4. Add the paneer, spring onion greens, vinegar, garam masala and sugar and toss lightly.

  5. Garnish with the chopped coriander and serve hot.
