  1. 4 pounds brisket

  2. Hot water 1 tablespoon salt

  3. 1 quart sauerkraut

  4. 1/4 teaspoon pepper

  5. 1 cup vinegar -- mild

  6. 3 tablespoons brown sugar

  7. 1 medium potato -- grated

  8. 1 teaspoon caraway seed

  1. Cover brisket with water; season. Simmer for 1 hour to 1 1/2 hours. Add sauerk raut, vinegar and brown sugar. Cook 1 hour longer. Add potato and caraway see d. Cook 10 minutes longer. Yeild 6 to 8 servings.
