  2. BUTTERMILK BRAN & BLUEBERRY MUFFINS

  6. 3 c Natural bran

  7. 2 c Whole-wheat flour

  8. 1/2 c Granulated sugar

  9. 1 tb Baking powder

  10. 1 t Baking soda

  11. 2 Eggs, beaten

  12. 2 c Buttermilk

  13. 1/3 c Vegetable oil

  14. 1/2 c Molasses

  15. 1 c Blueberries, fresh or frozen

  16. In large mixing bowl, mix together bran, flour, sugar,

  17. baking powder and baking soda. In another bowl,

  18. combine eggs, buttermilk, oil and molasses; pour into bran mixture and stir just enough to moisten. Do not

  19. overmix. Fold in blueberries (do not thaw if frozen).

  20. Spoon into nonstick or paper-lined large muffin tins

  21. 375F for about 25 min

  22. or until firm to touch. Remove from oven and let

  23. stand for 2 min before removing muffins from tin.

  24. Makes about 20-24.
