  1. Butterflied Chicken with Fresh Herb Seasoning

  2. 1.6 kg chicken

  3. 1 teaspoon oil

  4. 1 clove garlic, crushed

  5. 60 g butter

  6. 1 large onion, finely chopped

  7. 1 red pepper, finely chopped

  8. 1 tablespoon chopped fresh rosemary

  9. 1/4 cup chopped fresh coriander

  10. 3 cups (210g) stale breadcrumbs

  11. Using sharp knife or scissors, cut along either side of backbone,

  12. remove and discard backbone. Place chicken breast side up on bench,

  13. flatten with hand or rolling pin. Loosen skin over breast and drumsticks by sliding fingers between skin and meat. Push seasoning

  14. evenly under skin. Place chicken in baking dish, rub with combined

  15. oil and garlic. Bake, uncovered, in moderate oven about 1 1/2 hours

  16. or until chicken is browned and tender; allow to stand 15 minutes

  17. before serving.

  18. Fresh herb seasoning: Heat butter in pan, add onion and pepper,

  19. cook, stirring, until onion is soft. Stir in herbs and breadcrumbs;

  20. mix well.
