  1. 2 tbsp butter

  2. 2 whole chicken breasts, skinned, boned and cut into 1-inch strips

  3. 1 to 2 tsp rotisserie chicken seasoning Salt and pepper, to taste

  4. 2 cans cream of chicken soup

  5. 2 bags quick-cooking rice

  6. 2 cups mozzarella cheese

  1. Melt butter in a large, deep skillet. Add chicken strips, seasoning, salt and pepper; cook on medium-low heat until fully cooked. Dilute soup with ONE can of water; add to skillet. Continue to simmer, covered, on low heat until hot. Meanwhile, prepare rice according to package directions. Sprinkle cheese over chicken; cover skillet until melted. Serve over rice with a favorite vegetable.
