  1. 1 lb 454g / 16oz Fresh okra - cut 1/2 inch thick 8 tablespoons 120ml Vegetable oil

  2. 1/2 teaspoon 2 1/2ml Cumin seeds

  3. 1/2 cup 31g / 1.1oz Onion - peeled and diced

  4. 1/2 teaspoon 2 1/2ml Salt - to taste

  5. 1/4 teaspoon 1 1/3ml Ground cumin

  6. 1/4 teaspoon 1 1/3ml Ground coriander

  7. 1 teaspoon 5ml Ground amchoor or lemon juice

  8. 1/4 teaspoon 1 1/3ml Cayenne pepper

  1. Recipe Instructions Process the okra. Put the oil in large non-stick pan and heat over medium high heat. When hot put the cumin seeds in until they sizzle, then put onions and okra in. Fry 10 minutes stirring occasionally. As the onion turn brown turn the heat to medium and cook 5 more minutes. Gently stir in the salt, cumin, coriander, amchor and canned; cook 5 more minutes.
