  1. 1 tablespoon virgin olive oil

  2. 1 small onion, finely chopped

  3. 2 scallions, minced

  4. 8 ounces shelled fresh clams, drained and cut into 1/4 inch pieces 1/2 teaspoon finely chopped jalapeno pepper

  5. 2 tablespoons mayonnaise

  6. 1/4 teaspoon Tabasco sauce

  7. 1/4 teaspoon salt

  8. 3 slices white bread

  9. 3 tablespoons safflower oil Salad

  10. 1 1/2 cup mixed salad greens, washed and dried

  11. 1 tablespoon peanut oil

  12. 1 teaspoon red wine vinegar

  13. 1/8 teaspoon salt

  14. 1/8 teaspoon freshly ground black pepper

  1. Heat the olive oil in a skillet. When hot, add the onion and scallions, and sautÈ for 1 minute.

  2. Remove from the heat, and place in a bowl. Stir the clams, jalapeno, mayonnaise, Tabasco, and slat, and mix well.

  3. Break the bread slices into pieces, and place them in the bowl of a food processor. Process briefly, just until crumbed. Add the crumbs to the mixture in the bowl, and toss them in lightly. Form the mixture into 12 patties.

  4. Heat 1 1/2 tablespoons of the safflower oil in a skillet. When hot, add six patties and sautÈ for 2 1/2 minutes on each side. Repeat with the remaining oil and patties.

  5. In a bowl, toss the salad greens with the oil, vinegar, salt, and pepper.

  6. Arrange the green on four individual plates, and top each serving with three croquettes. Serve.
