  1. 1 bunch of bok choy

  2. 1 handful of snow peas

  3. 1 handful pine nuts

  4. 1 salmon cutlet

  5. sweet chilli sauce

  6. 2 limes

  7. fresh coriander

  8. Fresh garlic

  9. olive oil

  10. fish sauce

  11. 1 piece of red capsicum for garnish

  12. 1 stem of spring onion for garnish

  1. Blanch snow peas and Bok Choy in boiling water Add pine nuts upon serving Place Salmon cutlet in foil with a slice lime on top of the cutlet.

  2. Drizzle with mixture of olive oil, lime juice, fresh coriander, teaspoon of fish sauce and tablespoon of sweet chilli sauce.

  3. Bake cutlet for 15-20 mins Prepare green vegetables, and use extra sauce to drizzle over vegetables.

  4. Place salmon cutlet on top of green vegetables and garnish with finely chopped spring onion and red capsicum.
