  1. 4 bunches of scallions, about 6 scallions to the bunch

  2. 1 cup water

  3. 1/2 cup half-and-half

  4. 1/2 slice fresh bread

  5. 2 tablespoons grated parmesan cheese

  6. 1/4 teaspoon salt

  7. 1/4 teaspoon freshly ground black pepper

  1. Preheat the oven to 450 degrees F.

  2. Remove and discard the top 2 inches and any damaged or wilted leaves from the scallions. Rinse them thoroughly.

  3. Place the scallions and water in a stainless steal saucepan. Bring to a boil, cover, and cook over high heat for 5 minutes. Most of the liquid will evaporate.

  4. Arrange the scallions in a gratin dish, and pour the half-and-half over them.

  5. Break the bread into pieces, place in the bowl of a food processor, and process momentarily, just until crumbed.

  6. Mix the bread crumbs, cheese, salt, and pepper in a small bowl. Sprinkle the mixture over the scallions. Bake at 450 degrees F for 10 minutes.
