    2. 4 medium size zucchini, about 8 ounces each 1 large onion

    3. 2 cups sugar

    4. 2 cups distilled white vinegar

    5. 2 tablespoons pickling spice

    6. 4 bay leaves

    1. Cut zucchini into 1 inch chunks.

    2. Thinly slice onion.

    3. In 2 quart saucepan over high heat, heat sugar, vinegar, pickling spice and bay leaves to boiling.

    4. Add sliced onion.

    5. Cook 1 minute.

    6. Place zucchini in 11 x 7 inch glass baking dish.

    7. Pour vinegar mixture over zucchini.

    8. Cover with plastic wrap and refrigerate overnight to allow flavors to develop, stirring occasionally.

    9. Drain before serving.

    10. Serve with grilled steak or chicken, or hamburgers.

    11. If you like, store in decorative jars in the refrigerator.
