  2. 2 cups sliced fresh mozzarella cheese

  3. 1/2 cup whole leaves fresh basil

  4. 1 teaspoon chopped fresh thyme

  5. 1 anchovy , diced finely

  6. 2 tablespoons minced shallots

  7. 2 teaspoons minced garlic

  8. 1/4 cup extra virgin olive oil

  9. 1/8-1/4 cup balsamic vinegar, to taste

  10. salt and black pepper

  1. Whisk together dressing ingredients.

  2. Set aside.

  3. Layer on a platter the tomatoes,cheese, and basil.

  4. Pour dressing over the salad and serve.
