  1. large knob of butter

  2. 1 large onion , chopped

  3. 400 g fresh peas , podded

  4. 1 litres chicken or vegetable stock

  5. 1 lettuce , shredded

  6. black pepper

  1. Melt the butter in a heavy-based, high-sided frying pan. Add the onion to the pan and cook over medium heat, stirring often, until soft and golden.

  2. Mix in the peas, then add the stock. Bring to the boil and cook briskly for 5-6 minutes.

  3. Add in the lettuce, reduce the heat and simmer for 3 or 4 minutes. Season with salt and freshly ground pepper and serve immediately.
