  1. Ingredients (serves 4)

  2. 1 each red capsicum & tomato, chopped

  3. 1/2 Lebanese cucumber, chopped

  4. 2 garlic cloves, chopped

  5. 1/2-1 tsp caster sugar

  6. 2 tsp sherry vinegar (see note)

  7. 1/4 cup (60ml) olive oil

  8. 300g mixed salad leaves (mesclun)

  1. Place capsicum, tomato, cucumber and garlic in a blender and whiz until smooth. Pass mixture through a sieve, discarding solids, then season with salt, pepper and sugar to taste. Stir in vinegar and oil. Toss with salad just before serving.
