  1. 4 x boneless chicken thighs , skin off and cut into 1"cubes

  2. 1 x 14 1/2 oz can of tomatoes , diced

  3. 1 x 14 1/2oz can chickpeas ( garbanzo beans ), rinsed and drained

  4. 1 x large red capsicum (red bell pepper ), cut into 1" squares

  5. 1 x med. red onion , chopped

  6. 1/4 cup x golden raisins

  7. 2 tblsp x tomato paste

  8. 1/2 cup x water

  9. 1 1/2 tspn x ground cumin

  10. 1 tspn x paprika

  11. 2 tblsp x peanut or almond or cashew butter

  12. 3 tblsp chopped fresh coriander ( cilantro )

  1. Put chickpeas, tomatoes, capsicum, raisins, onion, paste, water, cumin & paprika into crock pot; stir well.

  2. Add chicken and stir into mix making sure chicken is covered Cover & cook till chicken is tender, 6-7 hours.

  3. Stir in nut butter. Serve hot over couscous garnished with coriander.
