  5. 1 tb Dried minced onion

  6. 1 tb Onion powder

  7. 2 ts Dried thyme

  8. 1/2 ts Salt

  9. 1 ts Ground allspice

  10. 1/4 ts Ground nutmeg

  11. 1/4 ts Ground cinnamon

  12. 2 ts Sugar

  13. 1 ts Coarsely ground black pepper

  14. 3/4 To 1 teaspoon cayenne pepper

  15. 1/4 c Snipped chives

  16. 1/2 c Finely chopped onion

  17. 4 tb Lime juice

  18. 2 To 3 teaspoons hot pepper

  19. Sauce

  20. Optional: 1 tablespoon oil

  21. 1. In a blender or food processor, combine the dried

  22. onion, onion powder, thyme, salt, nutmeg, cinnamon,

  23. sugar, black pepper, cayenne, chives, chopped onion,

  24. lime juice and pepper sauce. Blend to a thick paste.

  25. (If using skinless chicken, add the oil to the paste.)

  26. 2. Rub the paste over the chicken, cover and refrigerate overnight. 3. Grill the chicken - do not

  27. remove the spice paste before grilling. Note: Makes

  28. 3 1/2 lb. cut up chicken, or 4 large
