  1. 12 Carrots

  2. 1 Onion (small)

  3. 1 tablespoon 15ml Butter or margarine

  4. 1/2 cup 99g / 3 1/2oz Butter or margarine - softened

  5. 1 cup 198g / 7oz Egg - beaten (large) Salt and pepper - to taste

  6. 1 Garlic clove - minced

  7. 2 cups 292g / 10oz Ritz crackers - crushed

  8. 1 cup 146g / 5.1oz Shredded cheddar cheese

  1. Recipe Instructions Preheat oven to 325F. Clean and cut carrots into large pieces. Cook them in boiling water until soft. Drain well and mash. Saute onions over medium-high heat in the 1 tablespoon butter or margarine until very soft. In a large bowl, combine carrots, onions, 1/2 cup butter or margarine, egg, salt, pepper and garlic. Mix well. Spray an 8-by-8-inch Pyrex dish with nonstick spray. Place carrot mixture in dish and top with crackers and cheese. Bake for 20 to 30 minutes.
