  1. Frijoles Charros

  2. 1 tablespoons lard or vegetable oil

  3. 4 slices bacon, minced

  4. 1/2 onion, chopped

  5. 2 fresh jalapeono or serrano chiles, chopped

  6. 2 cloves garlic, minced

  7. 6 cups frijoles and bean broth

  8. 1 tablespoons salt, or to taste

  9. 1/2 teaspoons cumin, ground

  10. Cilantro, chopped

  11. Heat the oil and fry the bacon and onion together in a skillet over

  12. high heat until the onion is golden. Add the chiles and garlic and continue cooking for a minute more, until the chiles are softened.

  13. Stir the cooked mixture into a soup pot or crockpot containing the

  14. frijoles (include the bacon grease, if desired). Add the salt and cumin and simmer for 10 minutes or more to combine the flavors.

  15. Serve in a bowl, garnished with cilantro.
