  2. CREAM OF SWEET POTATO SOUP

  7. 3 md Sweet potatoes

  8. 2 c Vegetable broth

  9. 1 pn Nutmeg

  10. 1 pn Ground cloves

  11. 1 1/2 c Soy milk

  12. Salt -- to taste

  13. Peel and slice sweet potatoes.

  14. Place potatoes in a Dutch oven with broth. Bring to a

  15. boil, cover and reduce heat. Simmer until potatoes

  16. are tender, about 20 minutes.

  17. Place half of potato slices and half of broth in a

  18. blender. Add nutmeg, cloves, soy milk and salt, and puree. Repeat with remaining potatoes and broth.

  19. Return to Dutch oven, stir to blend and reheat over

  20. low heat. Serve hot, or chill and serve cold.
