  1. 200g cream cheese

  2. 1 hot-smoked trout fillet, flaked

  3. lemon juice

  4. a bunch of chives , snipped

  5. pitta bread , cut into triangles and toasted under the grill

  1. Mix the cream cheese with a flaked fillet of hot smoked trout, lemon juice and snipped chives. Spread onto toasted pitta triangles and sprinkle with more chives to serve.

  2. Quick prawn cocktails Put 600g peeled prawns in the bottom of 8 small glasses. Chop 2 ripe avocados and toss in 2 tbsp of lime juice. Divide between the glasses, top with chopped tomato, a dollop of crème fraîche and some snipped chives. Serve with a teaspoon on individual small plates. Makes 8.
