  1. 2 - 14 oz cans artichoke hearts -- mashed

  2. 3 egg s

  3. 1 C flour

  4. 1/2 C dijon mustard

  5. 1 tsp vinegar

  6. salt to taste

  7. pepper to taste

  8. oil -- deep frying

  9. remoulade sauce for dipping (see next page)

  1. Drain and mash artichoke harts. Mix in eggs, flour, mustard,vinegar and salt and pepper, blending well.

  2. Portion and shape fritters by rolling batter in a large spoon. Carefully drop into 5 to 6 inches of oil heated to 375 degrees.

  3. Keep fritters separated to prevent raw spots. Fry until golden brown. Fritters need no turning. Makes about 2 dozen, depending on size.
