  2. Title: THYME-LEMON ZEST HERB PASTE

  5. 4 tb Chopped shallots

  6. (about 4 shallots)

  7. 3 tb Ground almonds

  8. (about 24 almonds)

  9. Grated peel of 4 lemons

  10. 2 tb Fresh thyme (heaping)

  11. 2 tb Chopped parsley

  12. 1 tb Chopped shives

  13. 3/4 ts Salt

  14. 1/2 ts Ground white pepper

  15. 3/4 c Olive oil

  16. 1. In a food processor or blender, blend the

  17. shallots, almonds, lemon

  18. peel, thyme, parsley and chives.

  19. 2. Mix in the salt and white pepper. SLOWLY drizzle

  20. in the oil while the

  21. blade is turning. Transfer to tempered glass jars

  22. and store in the

  23. 8-10 weeks

  24. NOTE: You may wish to include up to 4 T. minced

  25. garlic in step 1.

  26. This goes well in tomato-based sauces. --
