  1. Sauce:

  2. 3 tablespoons Smart Balance® Rich Roast Peanut Butter, Creamy or Chunky

  3. 2 tablespoons sugar or pourable sugar substitute

  4. 1 1/2 tablespoons light soy sauce

  5. 1 tablespoon cider vinegar

  6. 1/2 teaspoon curry powder

  7. Filling:

  8. 2 1/2 cups coleslaw mix

  9. 1 cup cooked diced chicken breast meat

  10. 1/2 cup chopped red bell pepper

  11. 1/2 of an 8-ounce can sliced water chestnuts, drained and coarsely chopped

  12. 12 large Boston Bibb or Romaine lettuce leaves

  1. Place the Smart Balance® Rich Roast Peanut Butter in a small microwave-safe bowl and microwave on high setting 15 seconds or until slightly melted. Place in a blender with 2 tablespoons water and the remaining sauce ingredients; puree until smooth.

  2. Combine the coleslaw mix, chicken, bell peppers, and water chestnuts in a large bowl and toss until well blended. Spoon 1/3 cup of the cabbage mixture in the center of each lettuce leaf. Spoon 1 1/2 teaspoons of the sauce evenly over each and roll up.
