  1. 3 russet potatoes , peeled and sliced

  2. 1/8 inch thick

  3. 1/4 cup butter

  4. 1/2 onion , diced

  5. 1 tbsp. flour

  6. salt and pepper to taste

  7. 2 cups milk , heated

  8. 2 cups cheddar cheese , shredded (I used Kraft 4 cheese blend)

  9. 2 cups ham , diced

  1. Preheat oven to 375 Spray 2 qt. baking dish with cooking spray Cut potatoes into 1/8 inch slices (I used a mandolin)

  2. In saucepan over medium heat, melt butter Add onion and cook until tender Stir in flour, salt and pepper Cook, stirring constantly until almost bubbly Remove from heat Slowly stir in milk and then 1 1/2 cups cheese Over med low heat, stirring constantly heat until cheese is melted Spread 1/2 potatoes in casserole dish Spread ham over potatoes Add remaining potatoes Pour cheese sauce over casserole Bake uncovered 1 hour Top with remaining cheese Bake uncovered until top is golden brown and bubbly
