  1. 1 lb flank steak, shredded

  2. 1 tsp salt

  3. 1 tbsp cornstarch

  4. 3 1/2 tbsps oil

  5. 12 slices ginger root, shredded

  6. 2 1/2 tbsps soy sauce

  7. 1 tsp sugar

  8. 2 tbsps dry sherry or yellow wine

  9. 2 tsps cornstarch dissolved in

  10. 2 1/2 tbsps water

  11. 3 scallions, cut into 1 1/2 inches pieces

  12. Freshly ground black pepper

  1. Sprinkle the steak with the salt, cornstarch and 1 ½ tsps oil. Heat the remaining oil in a pan. Add the steak and ginger and stir-fry over high heat for 2 minutes.

  2. Stir in the soy sauce, sugar and sherry or wine and the cornstarch mixture. Continue stir-frying for a further 1 minute.

  3. Sprinkle in the scallions and add the pepper to taste. Stir and turn a few times. Transfer to a serving dish and serve hot.
