  1. 1/3 cup breadcrumbs, fine

  2. 1/4 cup parmesan cheese , grated

  3. 3 1/2 (8 ounce) packages cream cheese

  4. 4 large eggs

  5. 1/2 cup heavy cream

  6. 1/2 lb bacon

  7. 1 medium onion

  8. 1/2 lb blue cheese , crumbled (roquefort, stilton, gorgonzola)

  9. salt and pepper

  10. 2 -3 drops Tabasco sauce

  1. Sprinkle breadcrumbs and Parmesan cheese in a buttered water-tight-8 inch round springform pan. Set aside.

  2. Combine cream cheese, eggs, and cream in mixer.

  3. Saute bacon until crisp; drain and chop finely.

  4. reserve 1 tablespoon drippings and saute onion until clear.

  5. Add onion, bacon, blue cheese, salt, pepper, and Tabasco to cream cheese mixture.

  6. Pour into a prepared pan. Set pan inside a larger one; pour boiling water 2 inches deep into larger pan.

  7. Bake 1 hour and 40 minutes at 300 degrees.

  8. Turn off oven and let "cake" set for 1 hour.

  9. Remove pan from water and cool 2 hours.
