  1. 1 cup rice flour

  2. 80g butter or margarine

  3. 2 eggs

  4. Topping

  5. 1 cup Healtheries Wheat & Gluten Free Muesli

  6. 50g butter, melted

  7. 1/4 cup honey

  8. 1 egg

  9. 1 cup chopped dried apricots

  1. Place muesli, flour, honey, butter and eggs into a food processor. Process until well combined. Press into a greased or lined 18 x 28cm lamington tin.

  2. Prepare topping Combine topping ingredients. Spoon mixture evenly over base. Press down well with the back of a spoon.

  3. Bake in a moderate oven (180°C) for 20 minutes or until firm. Allow to cool. Cut into pieces. Store in an airtight container.
