  1. Redbook In medium bowl, combine chicken, bread crumbs, egg, scallions, 1 tablespoon Cajun seasoning, and mustard. Shape into four 4-inch patties.

  2. Heat oil in large nonstick skillet over medium-high heat. Cook patties 3 to 4 minutes per side until cooked through, reducing heat to medium if necessary. Top with cheese, cover, and melt.

  3. Mix barbecue sauce and 1 teaspoon Cajun seasoning. Serve burgers on buns with lettuce, tomatoes, onion, and sauce.
