  1. 4 chicken breasts

  8. 100g grated Parmesan cheese

  9. Olive oil

  10. 4 slices ham

  11. 4 tsp chopped fresh parsley leaves

  12. 4 slices mozzarella cheese

  13. 200g salt

  14. 50g black pepper

  15. 50g garlic powder

  16. 2 tsp dried oregano

  17. 1 tsp salt

  18. 2 tsp onion powder

  19. 2 tsp garlic powder

  1. Paula's baked ham and cheese chicken For the chicken:

  2. 1) Dredge the chicken breasts in flour seasoned with house seasoning, then dip in beaten egg seasoned with hot sauce to taste, then dredge in a mixture of bread crumbs, Greek seasoning, and Parmesan.

  3. Heat the olive oil in a frying pan over a medium-high heat and brown the chicken pieces on each side.

  4. Transfer the fried chicken to a baking tray. Top each piece with with 1 slice of ham, 1 tsp chopped parsley and 1 slice of mozzarella cheese.

  5. Place in the oven for 8 minutes, just until cheese melts and starts to get bubbly. Serve hot.

  6. For the house seasoning:

  7. 1) Mix the ingredients together and store in an airtight container for up to 6 months.

  8. For the Greek seasoning:

  9. 1) Mix the ingredients together and store in an airtight container for up to 6 months.
