  1. 3 eggs

  2. 185ml (6 fl oz/ 3/4 cup) milk

  3. 1 tablespoon caster (superfine) sugar

  4. Pinch of salt

  5. 1 tablespoon unsalted butter

  6. 8 slices white bread

  7. 100g (3 1/2oz) milk or dark chocolate, chopped

  8. To serve Icing (confectioner's) sugar

  1. Whisk together the eggs, milk, caster sugar and salt in a flat dish. Heat the butter in a large frying pan over medium heat.

  2. Dip two slices of the bread into the egg mixture, turning them over until they are completely coated. Put them in the frying pan and sprinkle each one with a quarter of the chopped chocolate. Soak another two slices of bread in the egg mixture and put on top of the chocolate bread in the pan to make sandwiches. Press lightly with a spatula to seal the edges.

  3. Cook for 3 minutes each side or until golden brown. Remove from the pan and serve immediately or keep warm while you make the other two sandwiches. Serve dusted with icing sugar.
