  1. 3 tablespoons soy sauce

  2. 2 tablespoons rice wine

  3. 1 tablespoon dark brown soft sugar

  4. 1/2 teaspoon cornflour

  5. 1 tablespoon vegetable oil

  6. 1 tablespoon finely chopped fresh root ginger

  7. 1 tablespoon finely chopped garlic

  8. 450g beef steak, cut into thin strips

  9. 225g mange-tout peas

  1. In a small bowl, combine the soy sauce, rice wine, dark brown soft sugar and cornflour. Set aside.

  2. Heat oil in a wok or frying pan over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned.

  3. Add the mange-tout and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to the boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.
