  1. 4 flour tortillas

  2. 1 cup (260g) hummus

  3. 100g mixed salad leaves

  4. 1 carrot , grated

  5. green capsicum, cut into thin strips

  6. 2 tomatoes , diced

  7. cup (100g) ricotta

  8. bunch chives , finely chopped

  9. 2 celery stalks, cut into 10cm lengths

  1. Place tortillas on a flat surface. Spread over hummus and top with salad leaves, carrot, capsicum and tomato. Roll up tightly to enclose filling and cut in half. Wrap in plastic wrap and a napkin and tie with string, if you like, then pack into lunch box.

  2. In a small bowl, mix ricotta with chives. Spread a little ricotta down centre of each piece of celery. Pack celery into lunch box with each tortilla.
