  8. 1/2 -ounce)

  9. 3 TB butter

  10. 2 TB packed dark brown sugar

  11. 1 1/2 ts ground ginger

  12. 2 15 ounce con part-skim

  13. : ricotta cheese

  14. 3 eggs

  15. 1 egg white

  16. 1 c buttermilk

  17. 1/2 c granulated sugar

  18. 1 TB vanilla extract

  19. 1 orange peel -- grated, no

  20. : white

  21. 2 TB orange juice

  22. 375 degrees. Grease a 9-inch

  23. springform pan or spray with nonstick spray.

  24. To make the crust, place the graham crackers, butter,

  25. brown sugar, and ginger in the bowl of a food

  26. processor and process until well combined. Press into the bottom of the springform pan. Place the pan in the

  27. 5 to 8 minutes. Remove from the oven and set aside to cool. To make the filling, place the

  28. ricotta, eggs, egg white, buttermilk, sugar,vanilla,

  29. orange peel, and juice in the bowl of a food processor or electric mixer and process or mix until smooth.

  30. Pour the mixture into the cooled crust, put on a

  31. baking sheet, place in the oven, and place a pan of

  32. 45 to

  33. minutes, or until set.

  34. Yield: 8-10 servings
