  1. 8 oz. pkg. corn muffin mix

  2. 1 Tbsp. chopped fresh parsley or cilantro

  3. Cooked slices of turkey

  4. 1/3 cup cranberry sauce

  1. Prepare muffins according to package directions, adding the chopped parsley or cilantro. Grease bottoms of miniature muffin cups, and fill each cup 2/3 full of batter. Bake according to package directions until light golden brown, and remove from muffin cups to cool.

  2. Cut each muffin in half, and make tiny sandwiches with the turkey and cranberry sauce (I'd add a bit of sour cream too).
