  1. 3 chicken breasts , boned and sliced

  2. 4 tablespoons almonds , chopped

  3. 2 tablespoons cornstarch

  4. 1 egg white

  5. 1 teaspoon salt

  6. 1 tablespoon light soy sauce

  7. 1 tablespoon cornstarch

  8. 1 tablespoon Chinese wine or 1 tablespoon sherry wine

  9. 4 tablespoons water

  1. Marinate chicken for 20 minutes, drain and set aside.

  2. Mix chopped almonds with corn starch.

  3. Beat egg white and dip in chicken.

  4. Preheat oil to 350F in a deep fryer or large saucepan.

  5. Roll chicken pieces in cornstarch mixture and deep fry until golden brown.
