  1. 2 cups 474ml All-bran extra fiber

  2. 1 1/4 cups 296ml Orange juice

  3. 1/2 cup 99g / 3 1/2oz Prune butter

  4. 1/2 cup 80g / 2.8oz Brown sugar

  5. 2 Egg whites

  6. 4 teaspoons 20ml Psyllium

  7. 1/2 cup 80g / 2.8oz Raisins

  8. 1 1/4 cups 78g / 2.8oz Whole wheat flour

  9. 1/2 teaspoon 2 1/2ml Baking soda

  10. 2 teaspoons 10ml Baking powder

  11. 1 teaspoon 5ml Cinnamon

  12. 6 Prunes - (for prune butter)

  13. 1/3 cup 65g / 2 1/3oz Water - (for prune butter)

  14. 2 tablespoons 30ml Wheat germ

  1. Recipe Instructions Preheat Oven to 400Spray Muffin Pan with quick spray of Pam and add 1/2 teaspoon Wheat Germ to each muffin tin. Shake pan so bottom of each tin is covered. Puree prunes and water in blender to make prune butter.

  2. Combine All-Bran Extra Fiber with Orange Juice, Egg Whites, Sugar, Psyllium, and raisins. Let stand for 10 minutes or so.

  3. Combine Flour, soda, baking powder, and cinnamon.

  4. Fold dry ingredients into All-Bran mixture. Blend until all dry ingredients are moist.

  5. Fill 12 muffin tins with batter. Tins will be very full.

  6. Bake at 400F for 20 minutes.
