  1. 1 lb lean ground beef (or ground turkey)

  2. 1/4 cup onion diced

  3. 1 clove garlic minced

  4. 1 1 1/4 oz pkg low sodium taco seasoing

  5. 1 15 oz can tomato sauce

  6. 1 4 oz can mild green chiles diced or chopped

  7. 1 1 lb box shell pasta (cooked and drained)

  8. 1 1/2 cups 2% milk shredded Cheddar Monterey-Jack or Cheddar-Jack cheese

  9. 1/4 cup green onions chopped

  10. 1/4 cup black olives sliced

  1. Preheat oven to 350 degrees and lightly spray a 9x13" pan with non-stick spray.

  2. Brown beef or turkey with onion and garlic in a skillet over medium heat. Drain grease. To meat in skillet, add tomato sauce, taco seasoning and green chiles; cook for 2-3 minutes until combined. Place beef mixture in bottom of 9x13" baking pan and top with shredded cheese. Top cheese with green onions and black olives, if desired.

  3. Bake uncovered for approximately 15-20 minutes or until cheese is melted. Serve with sour cream and a lettuce salad on the side. Yield: serves 6 Notes: I cook the shells al-dente so that they aren't over-cooked after baking.
