  1. 3/4 cup pistachios

  2. 2 1/2 cup whole milk

  3. 1 tsp rose water

  4. 2 drops food coloring (green)

  5. 1/2 cup water

  6. 5 tbsp light brown sugar

  1. In a heavy based pan, place the milk over low heat.

  2. Stir occasionally for 1 hour until the milk reduces its original volume by 1/6th.

  3. Roast the pistachio nuts and cut them.

  4. Mix the water & sugar. Heat them to make a thick syrup. Cover and keep aside.

  5. Now, put the sugar syrup, roasted pistas, rose-water and green coloring to the reduced milk.

  6. Stir until the mixture holds together without sticking to the pan.

  7. Spread the mixture in a greased tray.

  8. Allow it to stand for about 45 minutes to set, then cut into squares.
