  1. 25 g unsalted butter

  2. 125 g onions , chopped

  3. 2 cloves garlic , chopped

  4. 1 handfuls fresh sage , chopped

  5. 1 sprigs fresh thyme , leaves chopped

  6. 850 g pork sausage meat

  7. 2 egg yolks

  8. 100 g fresh breadcrumbs

  1. Sausagemeat stuffing Method 1. Heat the butter in a pan and gently cook the onions and garlic until soft and transparent. Add the herbs to warm through then leave to cool.

  2. Mix with all the other ingredients together then shape the mixture into a sausage shape. Roll in parchment paper, followed by a layer of foil. Twists the ends to seal well.

  3. Set a steamer over a pan of boiling water and steam the stuffing sausage for 25-30 minutes. Unwrap and slice before serving.
