  1. Mediterranean Pasta Salad

  2. 6 to 8 servings of pasta cooked and drained (penne, rigatoni, bows)

  3. some chopped cucumber

  4. red onion sliced or chopped

  5. mixed green and black brine cure olives pitted

  6. sundried softened tomatoes or fresh chopped ripe tomatoes

  7. fresh basil leaves

  8. crumbled fresh feta cheese

  9. marinated chopped artichoke hearts

  10. Dressing: either liquid from the marinated artichokes to moisten

  11. well or splash on extra virgin olive oil, red wine vinegar, minced

  12. garlic, salt and fresh grated black pepper

  13. Chill well and stir before serving.
