  1. 2 cups all-purpose flour

  2. 2 tablespoons sugar

  3. 1 teaspoon baking powder

  4. 1/4 teaspoon salt

  5. 1/4 teaspoon ground mustard

  6. 1 cup skim milk

  7. 1/4 cup egg substitute

  8. 1/3 cup butter, melted

  9. 3/4 cup finely chopped low-sodium ham

  10. 3/4 cup shredded reduced-fat cheddar cheese

  1. In a large bowl, combine the flour, sugar, baking powder, salt and mustard. Combine the milk, egg substitute and butter; stir into dry ingredients just until moistened. Fold in ham and cheese. Fill greased or paper-lined muffins cups about two-thirds full. Bake at 400° for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes before removing to a wire rack. Yield: 1 dozen.
