  1. 4 whole shallots -- minced

  2. 6 tablespoons butter

  3. 18 whole oysters -- with liquor 2 cups milk

  4. 2 cups heavy cream

  5. 1/2 cup dry sherry

  6. 4 tablespoons of butter for 5 minutes. Add oysters with their liquor. Bring to a boil, add milk and cream, salt and pepper. Simmer

  7. 2 minutes. Add sherry and again bring to a boil. Serve at once, with a teaspoon of butter in each serving.
