  1. 1 tablespoon oil

  2. 1 onion, coarsely chopped

  3. 1 garlic clove, crushed

  4. 500g lean beef mince

  5. 2 teaspoons ground cumin

  6. 2 teaspoons paprika

  7. teaspoon cayenne pepper

  8. cup (140g) tomato paste

  9. 1 cup (250ml) water or stock

  10. pinch of sugar

  11. salt

  12. 1 1/2 cups grated tasty cheese

  13. toasted tortilla and sour cream, to serve

  14. Guacamole

  15. 3 large ripe avocadoes, peeled and chopped

  16. 2 tablespoons lemon juice

  17. salt and pepper

  18. 1 tomato, coarsely chopped

  19. 2 green onions, finely chopped

  1. Heat oil in a large pan over medium high heat; add onion and garlic and cook, stirring frequently for 2-3 minutes or until softened.

  2. Add mince in small batches and cook until browned and crumbly. Stir in spices and cook until spices are fragrant.

  3. Add tomato paste into mince and mix well. Add water or stock and bring to the boil; reduce heat and simmer for 10-15 minutes. The mince should be tender and the sauce thickened. Season to taste with sugar and salt.

  4. Meanwhile, mash or process avocadoes with lemon juice until smooth. Season with salt and pepper and stir through chopped tomato and green onions.

  5. Spoon mince mixture into a serving dish; top with avocado mixture and grated cheese.

  6. Serve immediately with toasted tortillas and a dollop of sour cream.
