  7. 4 Potatoes -- medium

  8. 4 Bacon -- strips, cubed

  9. 3 Eggs

  10. 3 tb Milk

  11. 1/2 ts Salt

  12. 1 c Ham -- cooked, small cubes

  13. 2 Tomatoes -- medium, peeled

  14. 1 tb Chives -- chopped

  15. Boil unpeeled potatoes 30 minutes. Rinse under cold

  16. water, peel and set aside to cool. Slice potatoes.

  17. In a large frypan cook bacon until transperent. Add

  18. the potato slices; cook until lightly borwned.

  19. Meanwhile blend eggs with milk and salt. Stir in the

  20. cubed ham. Cut the tomatoes into thin wedges; add to

  21. the egg mixture. Pour the egg mixture over the

  22. potatoes in the frypan. Cook until the eggs are set.

  23. Sprinkle with chopped chives and serve at once. - - - - - - - - - - - - - - - - - -
