  1. Spicy Cauliflower Mash

  2. 4 cups cauliflower florets (about 1 large head)

  3. 1 cup grated mozzarella cheese

  4. 1/2 cup milk

  5. 3 tablespoons sour cream

  6. 1 tablespoon lime juice (about 1/2 lime)

  7. 1 to 2 teaspoons adobo sauce or to taste

  8. Salt and freshly ground black pepper

  9. Fresh cilantro, chopped, for garnish

  10. Steam the cauliflower in a steamer insert set over boiling water,

  11. 15 to 20 minutes. Transfer the steamed cauliflower

  12. to a blender and puree with the cheese, milk, sour cream and lime

  13. juice until smooth, scraping down the sides of the blender jar as

  14. necessary. Add the adobo sauce and salt and pepper to taste, pulse

  15. a couple more times and transfer to a serving bowl. Sprinkle with

  16. cilantro and serve.
