  5. 2 cups soft lettuce leaves

  6. 1 cup fresh coriander (Chinese parsley)

  8. cucumber

  9. peeled in lengthwise strips and with green strips in between, then

  10. cut in half lengthwise and into thin horizontal slices, forming

  11. semi-circles.

  12. A salad or vegetable platter is a very important part of a Vietnamese

  13. meal; indeed, it is served at practically every one. The vegetables,

  14. which are eaten along with many dishe, are arranged on a platter, and diner helps himself to whatever he desires. In Vietnam we used many

  15. more vegetables and herbs than we can find in the West. But, in

  16. spite of that, the following platter makes a satisfactory

  17. accompaniment to the dishes we have prepared for this book. All

  18. vegetables and herbs are those served in Vietnam, except that the

  19. variety is smaller.

  20. Arrange a mound of lettuce in the center of a platter. Around the

  21. lettuce, and touching it, arrange separate mounds of mint and coriander.

  22. Arrange the cucumbers in overlapping slices around the complete outer

  23. rim of the platter.

  24. This is the basic arrangement of the vegetable platter. On those

  25. occasions when a recipe calls for another vegetable, it can be added

  26. to this platter.

  27. Makes 8 servings.
