  1. VEGGIE FAJITAS

  2. broccoli, cauliflower, red and green bell peppers, hot green peppers,

  3. onions, garlic, (other vegetables), chopped bite-size

  4. 2 tablespoons soy sauce

  5. 1 teaspoon cumin

  6. 1 teaspoon oregano

  7. 1 teaspoon crushed garlic or garlic powder

  8. 1 teaspoon fresh ground black pepper

  9. 1 tablespoon water

  10. Mix the soy sauce, cumin, oregano and crushed/powdered garlic and marinate all vegetables in it for a few minutes. In the meantime,

  11. heat a wok or iron skillet so water boils away instantly. If you

  12. wish, coat the surface with a little oil. Toss in the vegetables

  13. with a tablespoon water, shake the pan, and cover for a few minutes,

  14. until the broccoli is bright green. Stir the vegetables, Add black

  15. pepper just before you remove the skillet from heat. The important

  16. thing is to prevent the veggies from becoming too tender, crispness

  17. is essential.

  18. Wrap in tortillas and add anything else, salsa, guacamole, cheese

  19. or sour cream if desired.
