  7. 2 pounds stewing beef (Prime round)

  8. --cut into 1 1/2-inch pieces

  9. 2 1/2 pints beef stock

  10. 1 pound small Irish potatoes

  11. 1 bunch small carrots

  12. 3/4 pound small onions

  13. 2 fresh tomatoes

  14. Assorted spices in a cloth bag

  15. --(thyme, bay leaves, garlic, etc.)

  16. Salt

  17. Pepper

  18. In a pot combine meat and stock. Bring to a boil, reduce heat, cover and simmer until meat is tender. Add vegetables and spices. Cook until

  19. vegetables are done, strain off one cup of stock from stew, thicken slightly

  20. with beef roux mixture (???). Pour back into stew and let simmer until ready
