  1. 2 cups 474ml Flaked cooked salmon

  2. 2 Hard-boiled eggs - crushed

  3. 1 Red or green bell pepper - diced

  4. 1 Cucumber - peeled, seeded,

  5. 1/2 cup 31g / 1.1oz Chopped onions

  6. 4 tablespoons 60ml Mayonnaise - (to 5) - or enough to moisten

  7. 1/4 teaspoon 1 1/3ml Cayenne pepper -

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. 1/2 Lemon - juiced

  1. In a large bowl, gently toss together the salmon and crushed hard-boiled eggs.

  2. In another bowl, combine bell pepper, cucumber, onion, and mayonnaise. Add seasonings and stir to combine.

  3. Pour mixture over salmon, add lemon juice, and toss lightly to combine. Serve over lettuce or as a sandwich.

  4. This recipe yields 4 servings.
